Sujuk, Soujouk or sucuk is a dry, spicy and fermented sausage which is eaten from the Balkans to the Middle East and Central Asia. Sujuk consists of ground meat usually beef or lamb.
Ground meat (usually beef), cumin, garlic, salt, red pepper are the main ingredients.
Sucuk—also spelled sujuk or soudjouk—is a Turkish national dish. Variations of it are also found in Eastern Europe, the Balkans, and the Middle East. It is known as sudzhuk in Bulgaria and Russia, suxhuk in Albania, and soutzouki in Greece.
